What is that thing that gleams in some fossilized ammonites?

That gleam isn't true opal (which is amorphous silica), even though many people call it "opalized ammonite" for the visual resemblance. It's actually layered aragonite or calcite that diffracts light the same way opal does, but mineralogically they're completely different species.

Quartz and glass are both silicon dioxide, right? So why does one grow those sharp faces and the other doesnt?

Quartz grows slowly, so its atoms lock into an ordered lattice — the flat faces are that internal geometry showing on the surface. Glass cools too fast for the atoms to order themselves.
